Preparation of cherry liquor:
Step 1: Cooking CherriesFor filling, we select ripe, and even overripe, fruits of a dark color. Wash the cherries well and allow them to dry by folding them in a colander. Then we remove the stems and seeds from the cherries. To easily remove the bone, you can use the usual hairpin. We grind the cherries in a blender and pour the resulting mixture into a glass jar or bottle. Bones from cherries are not discarded. We wash them and set to dry.
Step 2: the first stage of insisting.In a jar with chopped cherry fruits, add sugar and mix well. We tie the neck of the can with a bandage to prevent foreign impurities from getting into the tincture. We leave the tincture in a warm place for 5-6 days, so that the cherries ferment.
Step 3: final insistence.After the expiration of the infusion of the cherry-sugar mixture, we proceed to the fastening stage. The contents of our cans are filtered 2-3 times through cheesecloth folded 3-4 times, until we get pure juice. Pour it into a clean glass bottle and add vodka. Grind the dried bones in a blender and also fall asleep in tincture. If desired, you can add a little cinnamon or vanilla to give the tincture a rich aroma. The bottle is tightly screwed and sent to a dark place at room temperature for another 1 week.
Step 4: serve to the table.After the final stage of infusion, the cherry is filtered again, removing the seeds. Before serving, cool the ready-made liquor in the refrigerator for 1 hour, pour into decanters and serve. Enjoy your meal!
- - Tincture can be done without adding vodka, for this the cherry-sugar mixture is kept for 6 weeks and the liquor can be consumed.
- - You should not save on alcohol, vodka for filling should be of good quality, you can also take alcohol or cognac instead. But in no case moonshine.
