Eggplant salad with mayonnaise can absorb a lot of oil. I prepared this salad with the intention of using as little oil as possible.

  • 2 eggplants
  • 2 green onions
  • 2 tablespoons Greek yogurt
  • 3 hard boiled eggs
  • 4 tablespoons oil
  • 200 gr semi-smoked pork tenderloin
  • salt
  • pepper

Preparation time: less than 60 minutes

RECIPE PREPARATION Eggplant salad with boiled eggs:


  1. Wash the eggplant and wipe with a towel.

  2. Bake the eggplant on the stove [if you can outdoors, don't make the house smell bad].

  3. Put the eggplants under the lid for 10 minutes [they will be easier to clean].

  4. Wash the green onion and chop it.

  5. Clean the eggs. Two of them are finely chopped.

  6. The remaining egg is used for decoration.

  7. Cut the pork tenderloin into cubes.

  8. After the eggplant has cooled, chop finely.

  9. Mix the eggplant with yogurt, salt, pepper and oil.

  10. After that, add chopped eggs, green onions and semi-smoked mussels. Stir.

  11. Decorate the eggplant with slices of boiled egg and green onion.

  12. When serving, add tomatoes, peppers or green cucumbers, as desired.



Boil the vinegar with sugar, salt, pieces of beets and spices.
We peel the eggs and put them in a sterilized jar.
Pour the hot vinegar over the eggs. Place a knife under the jar so that it does not break.
Let it cool overnight and then put it in the fridge.
After a few days you can feel the taste, but I consumed them after two weeks when they were well pickled.

Cream of carrot soup with orange and ginger

Ingredients cream carrot soup with orange and ginger

  • 4 carrots marisupa carrot with orange
  • orange juice
  • two inches of ginger root
  • an onion
  • a zucchini (optional)
  • two tablespoons of olive oil
  • 1.5 liters of water
  • salt, pepper, nutmeg,
  • sour cream / kefir to serve (optional)

How to prepare carrot cream soup with orange and ginger:

Peel and chop the onion, carrot, zucchini and ginger as small as possible.
Put two tablespoons of olive oil in a larger pot and when it is hot add the onion, carrot and ginger and sauté for a minute and then add enough water to cover them and let it boil on the fire.

In ten minutes we add the zucchini, orange juice, spices to taste and the rest of the water.
Leave it on the fire until the vegetables are cooked, then put the pot on the fire and let it cool for a quarter of an hour.

Separate the vegetables from the juice and put them in a blender / food processor and mix them well until everything becomes the consistency of a cream.
Add the previously preserved juice until the cream reaches the desired consistency.
We put it on the fire again and bring it to a boil.

We put the soup aside and serve it while it is still hot, adding or not a little sour cream or even a little sour kefir, at the time of serving.

• Low carb hummus. Although it is a low carb choice anyway, hummus can be even easier if you replace some of the chickpea cream with avocado.

• Homemade cheese with radishes and dill. A homemade cream cheese with a 2% fat content is a snack in itself. But you can add slices of radish and chopped dill. Instead of radishes, you can use any other favorite vegetable, such as diced and peeled tomatoes or bell peppers. Also, instead of dill you can use fresh parsley or basil.

• Guacamole. Another famous snack from international cuisine, which contains well-baked avocado, sprinkled with lemon juice, mashed and mixed with diced onions and tomatoes. Instead of corn chips, which are usually served with guacamole, you can use vegetable sticks: carrots, radishes, celery stalks, red peppers, etc.

A low carb dinner can be consistent without being heavy. Evening meals may include various cooked vegetables. You can put a garnish of basmati or whole rice with them, so that you fit the recommended dose of carbohydrates.

• Musaca. Musacaua is mostly based on eggplant and minced meat and therefore can be a good choice for dinner. Attention, the puree has a high glycemic index, puts fewer potatoes or uses the eggplant version instead of potatoes. For the "white" sauce, use wholemeal flour.

• Cauliflower with cheese. Cauliflower tastes great in food and has few calories. Boil the cauliflower bunches in boiling water, then drain, sprinkle with spices and a little grated cheese or cottage cheese and an egg and then bake for a few minutes, until the cheese is browned.

• Vegetables in the pan. Pan-fried vegetables are very easy to make and very healthy and filling. A wok is very useful in this case. You can brown in it any of the following vegetables: bell peppers, broccoli, zucchini, mushrooms, tomatoes, eggplant, asparagus, finely chopped carrots, corn, baby spinach, leeks, garlic, celery, parsnips, etc. Some such vegetables, sprinkled with olive oil and sprinkled with spices can become a real delicacy that you do not even need meat.

-3-4 cup grated carrots
-1/2 julien red onion
-1 cup of celery
-1/2 cup lightly boiled grated pumpkin
-1 finely chopped red bell pepper
-1/2 chopped green parsley
Dressing sauce
-1/2 cup vegetable mayonnaise
-5 tablespoons lemon juice
-2-3 bundles chopped dill
-1/2 teaspoon pepper
-1-2 teaspoons mustard
Leave in the fridge for 1 hour.

ROLADA APERITIV
1. Grind 400 g of ham and rub with 75-100 g butter. It is spread out like a sheet on a slightly moistened plastic / aluminum foil, so that it does not stick.
2. Mix 400 g of cottage cheese with finely chopped onion, pepper, other spices to taste (Almette cheese can be used instead, but you need about 2 cans). Spread the second layer over the ham.
3. Boil 6 hard-boiled eggs, grind well in a blender and mix with 75-100 g butter (or chopped canned tuna + a little olive oil), a little mustard, salt and pepper. This is the 3rd layer. Roll and refrigerate. Serve with salad.

MOZARELLA SALAD (stolen from Jamie)
Sprinkle a handful of mint or parsley leaves on a plate (whole, only without stems). Put peach / kiwi cubes or other juicy fruits on them. Next layer: very thin strips of ham or lean ham (may be larger pieces, but be cut thin). Comes fresh mozzarella, cut into cubes or broken into pieces. Grate the lemon peel on top. Sprinkle with lemon juice and 1 tablespoon olive oil.

PREPARATION:

Meanwhile, make mayonnaise from two boiled eggs and one raw one as follows: rub the knots well until they crumble so that they do not remain lumpy, gradually add oil and always mix until smooth and the desired consistency is obtained. Put the cleaned eggplant on a mincer and grind with a wooden knife (especially for eggplant) water and mix with mayonnaise, finely chopped onion or grated with small mesh, match with salt and put in the cold.
