We sift the flour and make a hole in the middle. Add the yeast, salt, sugar and lemon peel. Mix and add beaten eggs and warm milk. Knead a dough that does not stick to your fingers (if necessary add more flour)

Spread the dough into a thin sheet, grease with cheese mixed with sugar, walnuts, beaten eggs and essence. Roll and cut into 8 pieces.

INGREDIENTS
30 x 30 cm & # 8211 tray
1 package noodles for cataif (bought from oriental butchers in your city, you will hardly find in the supermarket special noodles for cataif)
200 g butter + 1 lg for a tray
300 g Haloumi type grated cheese (or an unsalted creamy telemea or mozzarella)
SYRUP
1 cup water
1 + 1/3 old cane
3 broken cardamom seeds
saffron & # 8211 few threads (1/6 teaspoon)
1/2 lemon (juice)
1 tablespoon rose water

PREPARATION
Preheat the oven to 180 degrees.
Spread the noodles in a large bowl or tray.
Melt the butter first.
Grease with a spoon of preserved butter, another tray of 30 x 30 cm, in which you will bake the cake in the oven.
Mix the melted butter with the noodles that will grind.
Press the noodles into a layer in a greased baking tray.
Spread the grated cheese evenly over the faithful.
Brown for 20 & 30 minutes at 130-150 degrees, but watch out for electric ovens that cook faster.
Then turn it over in another tray.
The syrup is given a few boils with all the ingredients mentioned above for the syrup, but without the rose water that is put after you stop the fire at this syrup.
Syrup how hot the noodles are.
It is eaten hot or heated in the microwave. It is very good and cold.

Lamb meatballs with cheese

Lamb meatballs with cumin and Telemea cheese filling, hidden in a fluffy tortilla with cherry kumato tomatoes and lettuce, along with a yogurt sauce with spices and garlic.

  • a bun or 2 slices of older / dry bread
  • 4 cloves of medium garlic
  • a medium onion
  • a teaspoon of ground cumin
  • a teaspoon of chopped dill
  • 500 gr. minced lamb
  • 2 medium eggs
  • salt
  • black pepper
  • 100 gr. sheep cheese
  • wafers
  • 8 tablespoons olive oil
  • lettuce
  • rosii cherry kumato
  • yogurt
  • fresh parsley
  • fresh dill
  1. Soak the bread in water then squeeze well.
  2. Peel the onion and garlic (2 cloves) and cut into cubes.
  3. Heat 2 tablespoons of olive oil in a pan, then sauté the onion and garlic for 3 minutes.
  4. Incorporate the cumin and dry dill, after which the pan is removed from the heat and the composition is left to cool.
  5. The minced meat is mixed with eggs, the above mixture and bread.
  6. The composition is salted and peppered.
  7. From the above mixture, larger meatballs are formed in the center of which the cheese is cut into long strips and sealed well.
  8. Heat the rest of the oil in a pan, in which the meatballs are then fried over low heat for 2-3 minutes on each side.
  9. After removing from the pan, place the meatballs in a baking tray and bake for 20-30 minutes in the preheated oven at 180 degrees.
  10. After removing from the oven, place in a paste on a bed of salad and cherry kumato tomatoes over which prepare a sauce consisting of yogurt, greens (dill and chopped green parsley) and two cloves of garlic.

"Rose" pancakes with baked cheese
