Eggplant salad with mushrooms and mayonnaise


I made it according to Elena's recipe, a little modified but very good! Eggplants are my favorites: D

  • 2 matching eggplants
  • 1 can of canned mushrooms
  • 1 white onion
  • 3-4 tablespoons mayonnaise
  • 1 sprig of green onion
  • salt / pepper / ginger

Servings: 4

Preparation time: less than 60 minutes

RECIPE PREPARATION Eggplant salad with mushrooms and mayonnaise:

Bake the eggplants on the grill on both sides and clean them while they are still hot.

Pass with a blender and set aside.

Drain the mushrooms and cut them into small pieces, put them over the eggplant, add the white onion and finely chopped green onion.

Add 3-4 tablespoons of homemade mayonnaise.

Garnish with green onions, season to taste.
