So, it’s better to keep the fresh catch in the refrigerator for a couple of hours. Can I clean? We scrape the scales with a knife with crucian carp, gutting them and be sure to remove the gills. You can, of course, completely cut off your head. But this is up to you. There are people who especially like fried fish heads. So it is with tails. You can cut it off, you can leave it. As more like it. And now they need to be washed, wiped dry and lightly salt.

Step 2: prepare the egg-onion mixture.

Onions must first be peeled, finely, finely chopped and fry in a pan in a small amount of oil. For God's sake, not olive. On an ordinary vegetable, you can even unrefined, with a smell. After all, it was precisely this that was most widespread in Russia. Now let the onions cool, and we thoroughly beat the raw eggs with a mixer and combine them with the cooled fried onions and the butter on which it was fried. It is not worth pouring beaten eggs into hot onions; they may curl.

Step 3: fry the crucians.

Dip each of them into the egg-onion mixture, then into the breadcrumbs and fry on both sides in a hot frying pan with butter until golden brown.

Step 4: pour sour cream.

We lay the fried crucians in a pan, pour in not very fat sour cream and send to the stove. Now sour cream needs to be brought to a boil twice, but not boiled. Boil once - reduce the fire. It’s a bit cold - turn it on and let it boil again.

Step 5: serve to the table.
