  • 2 yolks
  • 60g sugar
  • 15g starch
  • peel and juice of 2 lemons
  • 30g cold butter

Raspberry jelly

  • 150g frozen raspberries
  • lemon juice
  • 50ml water
  • 30g sugar
  • 3g gelatin

White chocolate mousse with vanilla

  • 300g white chocolate (finely chopped)
  • 6g gelatin sheets
  • 240ml milk
  • 1 vanilla pod
  • 300ml cream for whipped cream (minum 30% fat)

Mirror glaze

  • 35ml water
  • 75g sugar
  • 75g liquid glucose
  • 6g gelatin
  • 50ml condensed milk (or whipped cream)
  • 75g white chocolate
  • red food coloring (powder or gel)

Method of preparation:

Mix the poppy seeds with the milk and set aside.

Mix the flour with the baking powder and a pinch of salt.

Beat the butter with the lemon peel and vanilla until creamy. Add the sugar and continue beating for another 3-5 minutes until it looks like foam. Add (alternating) the flour with the milk mixed with the poppy seeds, mixing well after each one until incorporated. Beat the egg whites (hard / Americans call them stiff peaks) and incorporate them with a spatula into the dough.

Bake the top in a tray lined with baking paper at 180C for 35 minutes or until the toothpick test passes. Let it cool for 15 minutes in the pan, then take it out on a grill to cool it completely.

* I bake the countertop the day before I start working on the rest of the cake components. He has enough time to cool down until the next day.

Start with raspberry jelly. I used whole raspberries and left it that way because I like how the whole fruit feels in the jelly.

Put the hydrated gelatin in cold water to cover it and in the meantime, place the frozen raspberries with the rest of the ingredients on a low heat in a suitable pot. Take the mixture off the heat, let it cool for a few minutes and add the gelatin drained from the cold water. Mix well to dissolve it and set the mixture aside to cool completely.

In the meantime, take care of lemon cream. Put the lemon juice and peel on the fire to heat it, and in a bowl rub the yolks with the sugar and starch. When the lemon juice has warmed up, pour it through a strainer over the yolks in the bowl. Mix well and put back in the pot and back on low heat. Leave on the fire (stirring constantly) until it starts to boil and the cream binds. Remove from the heat and pass the cream through a thick sieve, then incorporate the cold butter into it.

Assembly (part 1)

Cut the lid and the base of the countertop (as thin as possible) so as to remove the colored parts (when baking) from the countertop. Cut the countertop in half horizontally. Prepare a cake ring (tray with removable walls) lined with rodoid foil. Now it's time to whip the cream and first incorporate a third of it into the cooled chocolate mixture. Then, incorporate the rest of the cream with a round wire until you get the mousse.

Assembly (part 2)

Place a cake ring (20cm) on a cake board or on a plate, line it with rodoid foil and pour a third of the white chocolate mousse. Carefully place the core of the cake prepared earlier from the countertop, cream and jelly. Pour the rest of the mousse over it, carefully (especially at the edges), so that the mousse reaches everywhere. For glazing

Hydrate the gelatin in cold water.

Mix the sugar, water and liquid glucose and put them on the fire until they reach 103C.

Pour the hot mixture over the finely chopped white chocolate. Add the well drained gelatin and stir to dissolve. Add condensed milk and red food coloring (A knife tip for powder dye or 2-3 drops for gel dye. The color depends a lot on the dosage of the dye and the quality / shade of the one you have. ) Carefully blend all this mixture (with an immersion blender) without forming air bubbles several times. Allow the mixture to cool to 35-40C before using.
