You will see below that the ingredients for rice are as good as a sparrow. :)))))
I tell you from the beginning that I prepared more rice, but below I will give you enough quantities to fill the chicken breast and not have too much left over, unless you want to do more, as I did .

  • 1 chicken breast
  • 2 eggs
  • salt and pepper to taste
  • 4-5 tablespoons flour
  • 4-5 tablespoons breadcrumbs
  • frying oil
  • Filling:
  • 1/2 cup rice (I used a small cup of coffee)
  • 1/4 yellow pepper
  • 1 sprig of green onion
  • 1/4 carrot
  • 1 teaspoon oil
  • salt and pepper to taste
  • a little green from the jar

Preparation time: less than 90 minutes

RECIPE PREPARATION Chicken breast stuffed with rice:

In a small bowl put the washed and finely chopped vegetables (onion, pepper, carrot), oil and 2 tablespoons of water and let them simmer for a few minutes on low heat. We wash the rice and put it in the bowl on the fire, then we leave it to harden together with the vegetables approx. 2-3 minutes. Stir so it doesn't stick. Add a cup full of water, salt and pepper to taste and, in my case, vegetables.

turn on the heat until it starts to boil. When the water starts to boil, make a small fire and cover the pot with a lid. Let it boil for approx. 12 minutes, turn off the heat and leave covered for another 10 minutes. After it is ready, take it out on a plate and leave it to cool. I got a portion of rice. To fill the chicken breast you will need only a few tablespoons.

Wash the chicken breast and cut it in 2 vertically. We will get 2 thick pieces that we will cut horizontally, so as to obtain 4 pieces of chicken breast.

Beat the pieces of breast with the slice hammer, then season them with salt and pepper. In a bowl beat eggs with a little salt and pepper. In another 2 dishes put flour and breadcrumbs separately.

We fill the chicken breast with rice, roll it and put it in flour, egg and finally in breadcrumbs. We fry them in a pan with hot oil. The fire must be appropriate.

Leave them until they brown well on all sides, then take them out on napkins to absorb the oil.

In this recipe I used double quantities, I will write the version for 3-4 servings.

  • 500 g chicken breast (you can also use turkey breast)
  • 2 green onion threads
  • 2 cloves green garlic
  • 30-40 ml of olive oil
  • 2 tablespoons capers
  • 200 ml tomato juice (not broth!)
  • 200 ml white wine
  • olives, with or without seeds
  • salt
  • pepper
  • green parsley

Recipe - Chicken breast with tomato sauce, capers and olives

Cut the chicken breast into cubes.

Put the chicken breast and let it penetrate easily for 10 minutes, then add the chopped onion and garlic, then the capers.

Stir for another 2-3 minutes and pour in the wine, mix, then add the olives and tomato juice.
