Cooking donuts in the oven:

Step 1: prepare the yeast.

We turn on 2 hotplates on the stove to the middle level and put on it 2 stewpans, one with all the butter, which is necessary for making donuts and for the dough, and the second with whole pasteurized milk. Melt the fat to a uniform consistency, trying to make this so that it does not boil, and set the stewpan aside, allowing the oil to cool. Heat the milk to 35 - 40 degreesso that it is warm, but by no means hot otherwise granular yeast will not rise. After we pour half the milk into a deep pan, add sugar and salt to it, along with dry yeast. Insist them for 5 minutes.

Step 2: the first batch of dough.

After 5 minutes, add 2 tablespoons of melted butter to a bowl with the raised yeast and pour in the remaining milk. We drive into the container two eggs without shells. Add 1 - 2 pinches of cinnamon and lightly beat the mass with a whisk until a homogeneous consistency. Then we begin to introduce in parts into the liquid mass, sifted wheat flour, kneading with a tablespoon. After all the ingredients for the dough are combined in one bowl, it is advisable to continue the kneading using a food processor or mixer with a special nozzle for the dough, since at first the mass will be very viscous. Knead the dough with a food processor for 2 - 3 minutes. If you want to make it softer, you can add 2 tablespoons of warm water to the container.

Step 3: second batch of dough.

After 2 - 3 minutes of intensive kneading at high speed, the dough will become thicker. It is being transferred to the kitchen table, sprinkled with a small layer of sifted wheat flour. And we continue kneading with our hands for another 2 to 3 minutes. Then we roll the dough into a bowl, put it in a bowl, greased with 1 tablespoon of melted butter, and cover with food-grade plastic wrap. We put a bowl of semi-finished flour in a warm place, for example, near the included oven or stove. Give him the opportunity to rise during 1 hour and at the same time preheat the oven to 190 - 195 degrees Celsius. Also during this time we prepare 2 non-stick baking sheets, cover them with sheets of parchment paper.

Step 4: form donations.

After 1 hour, the volume of the test will increase 2 - 2.5 times. We shift it to the countertop, sprinkled with a small layer of wheat flour. Knead it very carefully with our hands. Kneading the dough is no longer necessary, it will do harm, not benefit, a large amount of flour can make it tough. We also sprinkle dough with a very small amount of flour on top, arm ourselves with a rolling pin and roll it into a thick layer from 1 to 1.5 centimeters. Using the shape for a large round cookie, cut out cakes in the layer. We shift the cakes to baking trays prepared for baking at a short distance from each other, 3-4 cm is quite enough. With a smaller round cookie cutter, cut small circles in flat cakes. If desired, you can combine them into one piece of dough, re-roll and form a few more donuts. But repeated kneading the dough in flour is very harmful, so as an option you can make small round donuts. We place small cakes on the second baking sheet also at a small distance from each other. Cover the still raw donuts with kitchen waffle towels and let them rise for 45 minutes.

Step 5: bake the donuts.

After 45 minutes remove kitchen towels from donuts. We check the oven if it has warmed up to the desired temperature and only after that we put the baking sheets in the oven, placing them in the center. Bake donuts for 8 - 10 minutes until golden, during which time they will reach full readiness. After the necessary time has passed, remove the baking sheets with the finished flour products from the oven, holding them with kitchen towels, and put on cutting boards. While the donuts are cooling down, mix the sugar and cinnamon with a whisk in a deep plate, they are needed for baking. We put the stewpan with the remaining oil on the stove, which is turned on to the middle level, and slightly warm up, it will take no more 1 - 2 minutes, during this time, the donuts will cool slightly, and they can be safely picked up.

Step 6: bring the dish to full readiness.

Slightly cooled, but still warm donuts are alternately dipped in preheated butter. Then in sugar with cinnamon. And we shift them to the metal grid with the oiled side up, so that the donuts cool down to room temperature. We also do with small round donuts.

Step 7: Serve the donuts in the oven.
