Ingredients for the preparation of smoked pea soup

Cooking smoked pea soup:

Step 1: Prepare the ingredients.

Peel onions, carrots, garlic and potatoes, then thoroughly wash all peeled vegetables under running water. Grate the carrots on a medium grater, chop the onion into small cubes. Cut the potatoes into medium cubes. Sort and rinse the peas well. Pass the garlic through the garlic press. Arrange all the ingredients on different plates.

Step 2: Prepare the roasting.

Cut the loin into small strips. Then put the pan on medium heat, add sunflower oil, heat and toss the chopped onion, fry it until transparent, then add the grated carrots, fry until cooked, then transfer to a separate bowl. In the same pan, fry the strips of the loin over medium heat. Fry the loin until it becomes rosy, then remove the pan from the heat.

Step 3: Cooking the Soup.

Pour the washed peas into a pan, fill with cold drinking water. Bring the water to a boil, remove the foam, then reduce the heat to a minimum, add garlic, then allspice. Boil for about 2 hours, periodically remove the foam. Peas need to be cooked until it practically turns into porridge, then you will be provided with a rich and tasty broth. After that, throw the cubes of potatoes, cook until cooked. Then add the fried onions, carrots and loin. Throw in the bay leaf, ground pepper, garlic and salt to your liking. Cook for about 20 minutes, then remove the bay leaf from the soup. Remove the pan from the heat and cover, let it brew for about 15 minutes.

Step 4: Serve the smoked pea soup.

Before removing the pan from the stove, you can add any greens finely chopped into the soup as well. Soup is best served hot in combination with home-made croutons of white bread. Good appetite!

Recipe Tips:

- - In order to make the pea soup especially rich and tasty, you need to carefully and correctly choose the variety of peas. It is best to use Dutch brain pea variety.

- - Before you plan to cook soup, peas should be soaked in cold water, at least for a couple of hours. Water needs to be changed several times during this time, so that as a result it is transparent.

- - You can also add Parmesan cheese, sour cream, dry wine or tomato juice to pea soup with smoked meats, which will give it an unusual aroma and exquisite taste.
