Preparation of yeast pancakes according to GOST:

Step 1: steam the yeast.

Turn on the stove to a medium level, put a pan on it with the right amount of pasteurized milk and heat the liquid to 30 - 35 degrees. Under no circumstances should milk boil, otherwise the yeast will not rise! As soon as the milk is heated to the desired temperature, using a kitchen towel, remove the pan from the stove and pour 100 - 150 grams of warm milk into a separate deep bowl. Then add the right amount of dry yeast in the granules to it and mix the ingredients with a tablespoon. Put the bowl in a warm place, for example, at the included stove and let it brew for 12 to 15 minutes. In the pan with the rest of the milk, put the right amount of salt, sugar and mix the ingredients with a whisk until sugar and salt grains are completely dissolved.

Step 2: introduce the egg and butter.

After, add the shell-free chicken egg to the milk and beat the mass with a whisk until a homogeneous consistency and light foam. Then turn on the stove to the smallest level and place on it a small stewpan with the right amount of butter. Let the fat melt, then transfer it to a separate bowl and let cool to room temperature. Add the cooled oil to a pan with beaten egg and milk, mix the ingredients with a whisk until smooth. It will take you 12-15 minutes to complete the second step, just during that time the yeast will rise.

Step 3: prepare the batter.

In a saucepan with a liquid mass, add the raised yeast and mix the ingredients with a whisk. Now start introducing into the liquid, sifted wheat flour while mixing the ingredients with a whisk. Do this gradually, in parts, using a measuring cup with a pen. When the bowl has the right amount of flour, knead the dough until smooth with a whisk. Knead so that there are no flour lumps in the batter. You should have a batter that resembles sour cream in consistency. Cover the pan with a lid and a kitchen towel. Place the container with the dough in a warm place and let it brew for 1.5 - 2 hours. During this time, the batter will increase in size by about 2 times.

Step 4: fry yeast pancakes according to GOST.

After the required time has passed, remove the lid with a towel from the pan and mix the dough with a whisk until it settles. Turn the stove on to the middle level, place the pan on it and let it warm up. Pour 2 tablespoons of vegetable oil into the bowl. Take a piece of clean sterile bandage, roll it up, dip in vegetable oil and squeeze. A very small amount of fat will remain on the tip of the bandage, lubricate it with a heating pan. Then lift the pan and pour a full ladle of dough onto it. In a circular motion of the hand, bend the pan so that the batter spread evenly over its entire bottom, and again place the bowl on the stove. Fry the pancake on one side until golden brown 30 to 40 seconds. During frying, the pancake will bubble, and it will turn out to be very airy. Then using a kitchen spatula, flip the pancake to the other side. If you are not afraid of a hot pan, you can turn the pancake with your hands, it will turn out quite dense and easily roll over to the non-fried side. Fry the second side of the pancake until golden brown for 30 - 40 seconds and prying it with a kitchen spatula, transfer the flour product to a large flat dish. Cook the rest of the pancakes in the same way. After you cook all the pancakes, let them cool a little, fill with any filling you like and make fresh tea, it's time to try your culinary masterpiece.
