Cooking Potato Tortilla:

Step 1: cook the vegetables.

We clean potatoes and onions. At the onion, remove the ass with the core - so you will not cry when slicing. We cut potatoes in uneven pieces (imagine that you cut it into puzzles). We put a large frying pan on the fire and pour sunflower oil into it. Yes, yes, all the butter. You can even a little more. We need a deep fat effect. Add a clove of garlic to the oil - not peeled! - and leave there. When the oil is warm, add fire and pour our chopped potatoes into the oil. They added a little salt and prevented. We turn to the onion - it needs to be chopped in the following order: in half, then half into a quarter and “quartered” half into half rings. Do not say some Abra-cadabra! As soon as you have finished slicing the onion, add it to the potatoes and mix. Cook in oil for 5-7 minutes.

Step 2: beat the eggs!

While the potatoes and onions are cooked in our improvised deep-fried, we drive all the eggs into a very deep bowl and beat them, pre-chopped and salted to taste. It's time to take off the vegetables. Find and pull the garlic. Be careful, remember, the oil is hot, the pan is hot! Keeping this in mind, we transfer the potatoes into a colander with a slotted spoon. Do not forget about the dishes under it! When the excess oil is glass, use the same slotted spoon to transfer the mass into a bowl to the eggs and set 20 cm pan to the fire. Add olive oil now. We are waiting for it to warm up. Now the most crucial moment!

Step 3: sleight of hand and no fraud!

Attentiveness is important now, because the first time I also did not understand what would happen. Pour our mixture into a heated skillet. The fire is medium. We notice that the edges began to be baked, and here with a spatula from the center to the edge and back we are “driving the wave”, we need to get as much of the bottom as possible. After two times, leave alone and take our large plate. With a spatula, we carefully check the state of the tortilla: if the edges are freely behind and do not tear, and the egg mixture thickens - you can! Turn the plate over onto the pan, hold it tight and ... turn the pan over onto the plate! Separate the pan and lower it back onto the fire. On the plate remains the “pie” turned upside down. We do not admire for a long time. In this inverted state, we return it to the pan and with a spatula we knock it inside the edge (you poke a blanket under the children for them). After 2-3 minutes repeat the operation. We cover, turn over - (we admire the baked side) - and return the first to the pan. 2-3 minutes - and the last time we turn over and return.

Step 4: serve the potato tortilla.

Across 2 minutes it’s time to remove the tortilla from the fire. You can on the same plate, you can fresh on the same diameter. We cover the pan, turn and remove, leaving our potato tortilla on a plate. After the manipulations done, the dish should rest 3-5 minutes. Yes, and you should sit down too. Nervous tension passed, and joy came from what happened! Before serving, cut the tortilla into 4 parts and invite to the table! Enjoy your meal!

Recipe Tips:

- - If a woman cooks, it is better to choose a frying pan in an easier way. Turning heavy dishes four times on weight is not very convenient; something may go wrong;

- - All about the same pan - it will be better if it is with a non-stick Teflon coating, then nothing will stick;

- - Sour cream sauce with spices can be served with potato casserole;

- - The composition can be absolutely diverse. Spaniards also add zucchini, tomatoes, herbs, peppers, etc. Just rely on the fact that the volume of the mass from this increases, - monitor the level on the sides of the dishes.

- - Once again I remind you - you are dealing with hot oil! If you have a metal slotted spoon - do not lower it cold. Better pre-rinse with warm water. Then the oil will not begin to twist.
