Cooking kebab from sturgeon:

Step 1: prepare the sturgeon.

We clean the sturgeon from the skin, for this we pour fish with boiling water, then the skin peels off much easier and faster. We carefully remove the head, tail, fins and clean the fish from the insides (for this, cut the belly from the head to the anal fin and get the intestines). Do not forget to rinse well inside the sturgeon with cold running water. Now we cut the resulting fillet into large pieces, sprinkle them with lemon juice and, in order for the lemon juice to absorb better, add a little sunflower oil and pepper all the fillets with white pepper, since only it will not kill the whole aroma of our fish. Leave the sturgeon to marinate for a couple of hours.

Step 2: prepare the vegetables.

We take a tomato and bell pepper, wash them thoroughly. We cut each of the eight tomatoes into 8 equal parts, and cut the peeled pepper into pieces. Try to cut everything so that it is convenient to string on a skewer and make vegetables of such a size that they are slightly smaller than the pieces of sturgeon fillet themselves.

Step 3: string the sturgeon and vegetables.

We put pieces of fish and all vegetables on each skewer. In this case, it is worth constantly alternating between them. Then it is necessary to slightly salt and fry a little in sunflower oil. When you get a golden crust on the fish, then the barbecue can already be put in the oven 200 degreesto bring them to full readiness. The total cooking time for barbecue is from 10 to 20 minutes, but from time to time it is worth turning and sprinkling lightly with a marinade in which the whole kebab is actually pickled.

Step 4: serve the kebab from sturgeon.

We put ready kebab from sturgeon on any serving dish and you can immediately serve it on the table. It is advisable to serve it with fat sour cream and whole parsley. You can decorate it with a lemon, olives or chopped vegetables. Enjoy your meal!

Recipe Tips:

- - We strongly advise you not to fry any kebabs of sturgeon or other fish in the summer season, as this meat spoils quite quickly. It is best to buy sturgeon meat for barbecue in winter and autumn.

- - if you do not like the smell of sturgeon meat, then it is quite easy to kill if sprinkled with a little lemon juice or white dry wine.

- - try not to overexpose such a kebab, otherwise the meat will become very coarse. To check the readiness of the meat - pierce it in several places with a toothpick and if it enters the meat easily, you can already remove it - the kebab is ready.
