Ingredients for Making Vegetable Soup with Lazy Dumplings

  4. Meat or chicken broth 2.5 liters.
  5. Bay leaf 2 pcs.
  6. Sunflower oil for lubrication.
  7. Salt, herbs to taste.

Cooking vegetable soup with lazy dumplings:

Step 1: prepare the dough for lazy dumplings.

Using a sieve, sift the flour onto the table with a slide. Break the egg into flour, salt to taste and, gradually adding cold boiled water, knead the dough with your hands. Wrap the dough with plastic wrap and put it in the refrigerator for 30 minutes.

Step 2: prepare the filling for the dumplings.

We clean the onion and cut it in half. Cut the meat with a knife on a cutting board into medium pieces. In a meat grinder, scroll beef and onions. Add salt, pepper and mix with a spoon.

Step 3: cook the lazy dumplings.

We take out the dough from the refrigerator and roll out a rolling pin into a thin layer on the table surface. Spoon the filling according to the dough, leave free dough on one edge. Very tightly roll the dough with minced meat roll, stick the free edge. Put the roll on a cutting board. Cut the roll with a sharp knife into slices. Put the lazy dumplings in the refrigerator for half an hour, so that when cooking the filling does not come up from the dumplings.

Step 4: prepare potatoes for the soup.

We wash the potatoes, peel and cut into small cubes with a knife on a cutting board. Add potatoes to the pan with broth and cook it over medium heat until cooked. about 7 minutes. Also add a bay leaf.

Step 5: prepare the onions and carrots for the soup.

Peel the onion and finely chop it with a knife on a cutting board. Peel the carrots and grate on a coarse grater. Heat the pan with sunflower oil over low heat, add carrots and onions and fry until golden brown about 10 minutes.

Step 6: prepare the greens.

We wash the greens in running water, dry with a kitchen towel and finely chop with a knife on a cutting board.

Step 7: prepare vegetable soup with lazy dumplings.

Add lazy dumplings to the broth with potatoes from the refrigerator, cook for 5 minutes over medium heat. Then put the carrots with onions and herbs in the soup, mix with a ladle. Cook for a couple of minutes, and as soon as the dumplings pop up, immediately turn off the fire.

Step 8: serve vegetable soup with lazy dumplings.

Pour the soup into portioned plates and serve hot with sour cream to the table. Enjoy your meal!

Recipe Tips:

- - Lubricate the table and rolling pin with vegetable oil before rolling out the dough. Sprinkle flour on the table is not necessary.
