Broccoli salad


Broccoli is washed well with cold water. Mushrooms are easily cut into slices.

Bring water to a boil with salt. Bring to the boil, then add the broccoli, simmer for only 3-4 minutes, then remove and immediately pass through a stream of cold water or keep the ice over the broccoli. The mushrooms are still partially boiled. Do this if you do not have a steam boiler.

After partially boiling the vegetables (to preserve their nutrients), drain the water and set aside. The broccoli stalks are cut into small pieces and added to the salad, as nutrients are also present in this part of the vegetables.

Add finely chopped onion, olives, salt, pepper and oil. Stir, croutons can be served.
