Peel a squash, grate it and slice it.
Cut the cabbage into small pieces, squares with a side of 1-1.5 cm.
We cut the ribs into pieces and boil them in a liter of water, we leave it like that for about 30 minutes.
In a pot in which I put two teaspoons of oil, sauté the carrot and onion, then add the necessary water, donut paste, cabbage, salt, green dill and ribs boiled with water from it.
Let the cabbage and carrot boil well until they are all cooked.
I add the cabbage soup with the juice from the pickled hot peppers.
Whoever wants can add a tablespoon of sour cream to the soup and sprinkle green dill on top.
Prepare the ingredients.
The vegetables are cleaned and washed.
Finely chop the onion, carrots, parsnips and celery.
Cut the cabbage finely or finely, each as he can or as he prefers.
Cook the onion with a tablespoon of oil, add the carrot, parsnip and celery.
Add the paprika and mix quickly, so as not to burn and pour the 2 liters of soup or water. You can put 3 liters, but I like it thicker and I don't use rantas to thicken it.
Add tomato paste or tomato sauce.
It tastes good with salt and pepper.
Serve hot as such or with sour cream and dill. You can also add hot peppers.
For me, the glossy (from the Hungarian lucskos kaposzta) it is a special smoked cabbage soup, a soup that must be sweet and silky, with an intense aroma of thyme. Every time I smell a dry bunch of thyme I automatically think of gloss.
This is the perfect recipe for me. I tried over time to change it (to put less smoke, more cabbage, more water, less or not at all rantas) to make it lighter but the truth is that none was compared with the real shiny, they were just ordinary cabbage soups.
Tip: use ribs true smoked naturally with smoke.
How to cook cabbage with pork Transylvanian recipe?
First I prepared the meat. I had some pork leg that I cut into larger pieces. You can buy working meat directly.
I remembered that I also had some nice slices of pork breast in the freezer & # 8230 I took them out quickly to thaw. I also chopped the onions.

I turned everything off by approx. 100 ml of white wine (or water). I waited for the alcohol to evaporate, then I put 100 ml of hot water and covered the pot with the lid provided. The meat must be simmered under the lid, over medium to low heat. This takes about 40 minutes and you need to add water for about 10 minutes (also 100 ml), as it evaporates. How to prepare sweet cabbage for quality?
In the meantime, I took care of the cabbage. I cut it first into quarters and then into not very thin strips.
I put the chopped cabbage in a large bowl and lightly salted it. Then I rubbed it lightly with my hands to soften it a bit.
The pieces of meat are already almost done (I tested them with a fork). They also have enough sauce around.

I put sliced cabbage on them. I also added a chopped red pepper (kapia) for taste and color.
I mixed everything well and put the rest of the cumin and a knife tip of dried thyme.
I put the lid back on the pot and hardened the cabbage without adding any more liquid! She will leave enough water. This stage lasts approx. 20 minutes. I stirred occasionally so that it wouldn't catch and burn.
I can't tell you how good it smells in the kitchen !! I put out the fire under the pot and that's it. We like it more with sauce, but you can also lower it completely by boiling it for another 5 minutes without a lid, on a faster heat.
Glossy or Transylvanian cabbage soup
This soup reminded me of the taste of home, of childhood. it was basically my favorite. I prepared it with great pleasure, based on my mother's recipe, but in my style! It's a very tasty, filling soup. In the original version, no vegetables other than cabbage and broth or tomato paste are used. I chose to modify it, taking advantage of all the autumn vegetables, for an extra taste and flavor!
First we grate the cabbage, we massage it vigorously with a little salt. Grate the carrots, finely chop the peppers, donut, dill, tomatoes.
Boil the pork chop together with the peeled onion, the thyme mixture, a little salt and pepper, enough water to cover it. We boil it for an hour.
Separately, heat the pepper and the donut in a little oil for 5 minutes, add the carrots, heat them for 10 minutes, then the cabbage, leave for another 10 minutes. Put the resulting composition aside.
Add it to the soup pot, together with a little warm water to cover it, boil it for another 30 minutes, then put the tomatoes, continuing to cook for another 10 minutes.
Separately, heat a little oil in a pan, heat the flour for 2 minutes, add the spices, leave them for a minute, a pinch of juice, dill, mix everything and put the resulting sauce (or rantas) back in the pot. We add 2, 3 more boils, after which we season, add, if necessary, a little lemon juice or vinegar, a little sugar.
Transylvanian cabbage soup is served (at least in my representation), with lots of sour cream, toast greased with lard, paprika and cumin, plus the tender meat from the pork chop.
It's really crazy, with the taste of childhood!

Saute onions in oil and water in equal proportions. Add the carrot, celery and bell pepper, all chopped into small cubes and the smoked ribs cut into suitable pieces.
Bake together for 1 minute, stirring constantly, then pour hot water to cover everything.
The soup is left to simmer until the vegetables and meat are half cooked.
Now add the finely chopped cabbage, tomato juice, salt and pepper to taste. Boil for another 15-20 minutes, then add the borscht or cabbage juice (cooked first separately).
After two or three more boils, the fire stops. Sprinkle on top, finely chopped green parsley and a little dried thyme.
Serve with sour cream and hot peppers.

The soup involves borscht and larch. That's how I learned from my mother. I made it as such and it turned out wonderful. With or without meat, with or without cream, it turns out delicious anyway!
Still broken by me personally.
