Festive potato salad with mushrooms and egg

  • 3 large boiled and cooled potatoes
  • 1 preserve small mushrooms
  • 3-4 pickles
  • 3-4 green onion threads
  • 2 hard boiled eggs
  • 1 small Greek yogurt (150 grams)
  • 1 tablespoon mustard (I prepared it at home)
  • 1 teaspoon green olive paste (or 50 grams of finely chopped olives)
  • 1 teaspoon extra virgin olive oil
  • salt (pepper to taste)
  • black olives / kalamata for decoration (I used Kalamata olive paste)
  • green dill for decoration

Mushroom meatballs

Looking for something in the freezer, I came across a bag of forest sponges. The sponges were picked by my father. I had dew sponges in my bag. But you can use any kind of sponge or champignon mushrooms on the market.

The mushrooms are cleaned, washed and boiled in water with a pinch of salt. When cooked, drain in a sieve. They are then passed through the meat machine, together with the carrot, onion and garlic cloves (of course peeled).

If you have started fasting or want to make the transition to a vegan diet, then we know that it can be difficult to find meals that satisfy everyone at lunch, dinner or, in general, at family meals. It can often happen that friends or family members do not fast or eat exclusively vegan. At the same time, preparing two main ways to meet everyone's needs can be exhausting, especially at the end of the day. The solution is to adapt flexible dishes to reconcile everyone at the table.

Here are five categories of dishes that you can easily adapt to get over the situations in which you have to cook for more diets. And, who knows, maybe you'll be able to persuade others to fast with you or start eating more vegetables. The changes come in small steps and you can start by adding a non-vegan product to the portion you eat with, and then, gradually, maybe they will be convinced of the taste and nutritional benefits.

Such habits are extremely healthy for the little ones as well. It is important to give them a try from vegan and fasting dishes and to accustom them from an early age to as many vegetables and different tastes or textures.

1. Garnishes

A first option is that of some main types of fasting, which, served in small quantities, can take the place of a delicious garnish for the other members of the table. Prepare a larger quantity for yourself, to get tired and share with the rest. For example, we like, as such or as garnishes, cauliflower with Hollandaise sauce, quinoa with zucchini and broccoli or a Chinese rice. Put them on the table and we guarantee that there will be nothing left!

2. Soups and soups

Soups and broths are perhaps the most flexible dishes. You can put them in anyone's lunch very easily. Because they have many vegetables and aromatic ingredients, all you have to do is separate the basic, vegan composition and add the desired ingredients for the others. But you can put them on the table in their fasting version and we are sure that those at the table will not feel the difference in the second portion! Very tasty and nutritious are: red lentil soup with vegetables, minestrone soup or the one with vegetables and tofu.

3. Stews

According to the same principle, you can adapt the stew recipes. You start from a base with a lot of tasty vegetables and add everything else you want besides. But do not forget that this is the perfect time to cook and spend more time with those close to you. If you still have different culinary preferences, you can cook together and so everyone customizes their "part" of the recipe. Try a pasta bean dish or a chickpea stew. And if spring has come, integrate as many fresh vegetables with a pumpkin dish or a curry with spinach and chickpeas.

4. Pasta and pizza

In the case of pasta, you can easily adapt it using toppings. For example, prepare a simple pasta recipe, such as those with zucchini, tomatoes and olives, or carbonara with mushrooms, and then each adds various toppings and ingredients prepared separately to the plate. And speaking of toppings, what could be more convenient than a pizza. Make a homemade pizza with vegetables together and each one puts on his half or part what he wants.

5. Preparations with fillings

It is very easy to make each filling or adapt the fasting one, and then prepare some tacos, burittos or vegetable tortillas with them. In the right combination, you won't even feel the difference between a vegetable burger and a regular one.

However, if you tend to cook more often during fasting, you can try to adapt the fillings for stuffed peppers or fasting sarmales.

In fasting, but also when you try to follow a vegan diet, you must not lack imagination. Play with what you have in the kitchen, experiment with different ingredients and recipes and it is impossible not to satisfy even the most capricious vegetable!

I made a home made pizza, totally (almost)

The ingredients are not just for 1 pizza. I also needed mushrooms for something else, as well as the tomato sauce.

Dough for 2 pizzas 45x45 cm

650 g flour
500 ml of milk
4 tablespoons olive oil
15 g dry yeast
15 g salt

Put the flour in the bowl of the robot, add the yeast, oil and salt. We start to knead lightly.
Little by little, add the milk.

We continue to knead until the dough comes off the robot bowl.

Form 2 balls, which we grease with a little oil, and put them in the bag, which we close / knot / twist well, and hop in the fridge with them
I always do this with this dough. It looks much fluffier, if it grows cold.
If you freeze it..when you defrost it (at room temperature) and make pizza..it's better, fluffier

Meanwhile, make the sauce and prepare ... what to cover
We need:

well ripened and soft tomatoes
salt and pepper
olive oil
ementaler / grated cheese

I cut the grobalane mushrooms, because I intend to make pizza only with mushrooms and cheese.
I washed the tomatoes, cut them into pieces. I washed the basil, I cut the garlic into pieces, salted, peppered, and I put the mixer stick in the bowl.

I ground it until I liked the consistency.
Then I poured some olive oil. I spun a little with a shovel.

When you think you feel like pizza, take the dough out of the fridge and spread it by hand on a tray brushed with oil. Leave it like this until your oven heats up to at least 250 & # 176C.

When the oven has reached its temperature, quickly grease the sheet with sauce, spread the mushrooms and the grated cheese on top, and put it in the hot oven. Leave it as brown as you like.

Look how beautifully decorated my plate was, by a young designer, who took a broken rose from the garden (but she washed it) .. wet, it was wet..now how clean it was I don't know.. anyway I didn't eat it: P

4 slices of beef for snitel
5 mushroom mushrooms
1 red onion
1 red pepper
50 gr telemea green parsley cheese
1 or
2 tablespoons breadcrumbs
salt, pepper, paprika
2 carrots
1/2 bag of frozen peas
1/2 canned corn
salt pepper
olive oil
Mushroom sauce with sour cream:
4 mushrooms
2 tablespoons sour cream
1 Knorr mushroom cube

Chop the onion, pepper, mushrooms and mix with grated Telemea cheese, chopped green parsley, egg, breadcrumbs and spices. Sprinkle salt and pepper on the beef slices, spread the filling and roll. Put them in a tray, sprinkle with a little oil and sprinkle dried rosemary on top. Add a cup of water to the pan and put in the oven. From time to time, remove the tray and sprinkle the pieces of roll with the juice from the tray.

For the garnish, I boiled the sliced ​​carrot. After I put out the fire I added the frozen peas. I left it for 3 minutes and then drained it. I also added corn. I then hardened them in a little olive oil and seasoned them.

For the sauce, I hardened the sliced ​​mushrooms in a little olive oil, then I mixed them together with the cream and the Knorr cube.

To the remaining filling I added another egg, put it in a form and put it in the oven.

Last night I was in town and I looked for a long time at my husband and boy who were enjoying a delicious pizza! Hmmm, I had to try a new pizza recipe today that looks like the real thing! And I managed, inspired here and there, to bury a dukan pizza with a crispy top like I have never eaten before. I definitely do!

Cruise Phase, Consolidation, (PL)

- an envelope of dry yeast (7 gr)

Beat the egg a little and add the oat bran. Pour the yeast powder and a little salt over them and mix to homogenize. The dough formed, with a soft consistency, is poured into the tray on baking paper and molded in a thin layer in a round shape (the pizza one.

Put it in the preheated oven at 180 degrees and keep it for about 8 minutes. Then take out and put in turn: tomato sauce (from the ones without added sugar), sliced ​​chicken or turkey ham, 1-2 slices of shredded melted cheese (Hochland Fitness I used & # 8211 optional, rather at consolidation) and 3-4 slices of pepper.

Add salt, thyme and put in the oven for about 10-15 minutes (or until you think it's ready). It was deliciously good!
