Searing a fish perfectly is one of those kitchen skills that seems like it should be easy, and yet somehow it often goes wrong for the home cook. Luckily, Todd Mitgang from Crave Fishbar was willing to walk us through the finer points to make sure we end up with a fish that is soft on one side and perfectly crisp on the other.

One of the key starting points is having a hot pan to begin your sauté; placing the fish in a cold pan and then warming it up will not do the trick. Once the fish is on the pan, press it down with a fish spatula to ensure even cooking. Most importantly, patience is a virtue here. The minute you sneak a peek and turn your fish over too early, your sear is done for.

How to Get Perfectly Seared Salmon Fillets Every Time

It's not about a special tool, not how long to cook each side, or the right way to flip. It actually happens before you even turn on your stove.

The Challenge: Searing salmon fillets is tricky, to say the least. First, the fillets each have thick and thin sides that cook at different rates, the thin side often overcooking before the thick side is done. The thick side also has more contact with the hot pan, so the outside crust is also uneven.

Second, the skin takes longer to cook than the flesh it&aposs usually not done when it&aposs time to flip.

Third, despite being a richer, fattier fish, salmon cooks much faster than you think. By the time the skin is crisp and the thick side has caught up to the thin side, the fillet is often overcooked.

The Solution: The key to perfectly seared salmon is to add your fillets to a cold, dry pan, then turn on the heat.

Starting your fillets in a cold pan cooks the fish slowly and evenly. It gives the skin more time to become crisp and golden and for the natural fat to render. (This is why you don&apost need to add oil to the pan.) Cooking gradually also helps the fillets to stay flat so you get a golden-brown color all over both sides of the fillet. By the time the pan is hot, you&aposll be ready to flip the fillets and finish cooking.


Step 1: Dry the Fish Skin Very, Very Well

Fish is moist, and that moisture actively works against your efforts to crisp its skin—in order for that to happen, the skin has to dehydrate first, which takes a lot of energy. Any water we can remove from the skin before it ever hits the pan gets us ahead by leaps and bounds, since it's that much less water that needs to be driven off in the pan.

There are two things I like to do to dry the skin. The first is a technique I think I first learned from Thomas Keller, in which you use your knife more or less like a windshield wiper, gently dragging the blade across the skin. Liquid will collect on the knife's edge as you literally scrape it from the skin wipe it up with a paper towel every few passes, then go back and scrape some more. I do this over and over until the knife comes up dry with each pass. Just be careful not to press too hard. Fish is delicate, after all, and you don't want to smash it.

The second thing I do is pat the fillets dry with paper towels. If you've done a good enough scraping job, the towels should come up bone dry, but it's still worth making sure.

If you have whole fillets, it's easier to do the drying before portioning them (as pictured in the photos here), but it's not required.

Here&rsquos a Foolproof Two-Step Way to Cook Fish

One of the first things you learn when you are trying to eat healthily is that you should have more fish in your diet. Which is great if you grew up cooking fish or live near a seashore and have access to excellent fresh seafood. But for those of us who grew up predominantly on frozen fish sticks and canned tuna, wanting to add fish into our diets can be a bit daunting.

Never fear, my friends, I have been where you are, and I am here to tell you that cooking fish at home can be easy, fast, and delicious. And you don’t need a recipe, just a technique. What you do to your fish once it is cooked, with sauces or garnishes, that is up to you. I am just here to get you from fishmonger to table with a well-cooked filet on your plate.

For starters, be sure that you are buying your fish from a place with good turnover, and that the fish you buy smells like the sea and not fishy. It should be tacky to the touch, not slimy or wet. The choice of fish is up to your preference. And frozen filets are fine, just thaw in the fridge overnight.

The key to preparing perfect fish is following a two-step process. Sear on the stovetop, finish in the oven.

The stovetop gives you browning or crispy skin, and the oven finishes the cooking and keeps it moist. I like a thicker filet for this process, a minimum of ¾ of an inch, but up to two or even three inches thick is fine, or you can use it for small whole fish like trout or snapper. Super thin fish like sole or skate do better with just a pan fry.

First, you will need an oven-proof non-stick skillet.

Heat your oven to 400 with a rack in the top third, but enough space to slide the whole skillet into the oven without touching the sides or getting too close to the top.

Pat your fish dry with paper towels and oil it lightly on both sides with cooking spray or a drizzle of neutral oil. Season with salt, and any other seasonings you prefer. Oiling the fish and not the pan will help prevent both burnt oil and smoking and will keep spatter to a minimum.

Heat your skillet over medium high heat and add your fish (skin side down if you are cooking skin-on) once the pan is hot, the fish should sizzle as soon as it hits the pan. Leave without moving for 2 minutes, to get a bit browned or crisp the skin, then flip using a thin flexible spatula.

Cook on the second side for one minute, then slide the whole skillet into the 400-degree oven. Cook for 10 minutes for thinner fish, 12-14 for thicker, 16-18 for super thick. Remove from the oven and serve hot with the sauce or garnish of your choice. If you are cooking a fish like tuna or salmon and you want them a little more on the rare side, reduce the cooking time by 2 minutes for thinner, 4 minutes for thicker.


How to Pan Sear a Halibut Steak to Perfection

A hearty halibut steak, pan-seared to perfection, is our favorite kind of steak. After all, nothing sizzles and satisfies like a meaty steak cooked in a hot skillet.

The best part about pan-seared halibut steak is that it&rsquos ready in well under 10 minutes, needing little more than some salt and pepper, making it quick and easy to treat yourself to glorious steak dinner.

Bone-In Bounty

If you have a steak cut from the tail of the halibut, the bone will probably be in the center of the portion. Steaks cut from the wider parts of the fish will have bones running along the edges, hidden under the skin. Leave these bones in, as there&rsquos no reason to remove them now &mdash once the steaks are cooked, the flesh can easily be pulled away from the bones.

However, we do suggest feeling out the steaks after you defrost them to get an idea of where the bones might be, since you won&rsquot be able to visually locate them after they have been seared.

Pan-Searing 101 for Halibut Steaks

Heat up a cast iron pan or heavy-bottomed skillet over medium-high heat, adding enough cooking oil to just coat the bottom of the pan. Use an oil with a high smoke point &mdash canola, peanut, or grapeseed oils are all good options. You want the pan nice and hot so that the steak will have enough time to develop a proper, golden sear in a relatively short period of time this will make it less likely that the steak will be overcooked by the time both sides are seared.

Pat dry the halibut steak, removing as much excess water as you can with a tea towel or paper towel. This step is crucial in allowing you to get a proper sear on the surface of the steak. When you&rsquore about ready to cook your fish, season each side with salt and pepper. Pro tip: Actually, if you have time, it&rsquos nice to pat the steak dry about 30 minutes beforehand. Then, move the steak to the refrigerator, uncovered on a plate, so that the surface of the fish becomes even drier. Wait to season the halibut steak until just before cooking.

Once the oil shimmers and has just begun to smoke, carefully lower the steak into the pan and leave it be. The oil will likely spatter just a little bit &mdash the drier the steak, the less it will spatter. Avoid covering with a lid, though, as this can actually trap moisture in the pan and lead to more issues later on.

Allow the halibut to sear for about 3 minutes on the first side. You&rsquoll notice the edges of the skin just beginning to crisp up where it&rsquos touching the pan, and the steak should have had enough time to develop a browned crust. Then, use a fish spatula to flip the steak if you find it sticking to the pan a bit, just gently work your way underneath it.

The steak will need another 2 to 3 minutes on the other side, depending on the thickness of the cut. If you have an instant read thermometer, that will come in really handy here, allowing you to check the internal temperature of the steak around the 2-minute mark. Aim for 125 degrees here, since the steak will continue to cook for a bit after it&rsquos off the heat.

If you don&rsquot have a thermometer, just go ahead and use a fork to check on the flakiness. A thinner steak (between ¾ to 1 inch thickness) will take about 2 minutes on this final side to be cooked through, while anything that&rsquos an inch or more thick will likely need a full 3 minutes. If you see the flakes beginning to separate on their own without your prodding, the steak is on the brink of being overcooked &mdash try to get it off the pan before that point.

Transfer finished halibut steak to a plate, then top with a classic steak condiment that works well with a hearty variety of white fish: a pad of your favorite compound butter, or maybe even a heaping pile of sauteed mushrooms.
